Flaky Turkish Poğaça Buns

Ingredients

  • 125 grams butter, at room temperature
  • Slightly less than 1 cup vegetable oil
  • 2 egg whites (yolks reserved for topping)
  • 1/2 cup yogurt
  • 1 cup lukewarm water
  • 2 tablespoons sugar
  • 1 level teaspoon salt
  • 1 level tablespoon instant yeast
  • 2 packets baking powder
  • 6 cups flour (add gradually)

Preparation

  1. In a bowl, mix yeast, sugar, and water until the yeast is fully dissolved.

  2. In a mixing bowl, combine butter, vegetable oil, salt, baking powder, yogurt, egg whites, and the yeast mixture; stir well.

  3. Gradually add flour and knead the dough.

  4. Cover the dough and let it rest for 30 minutes.

  5. Shape the dough and place the pieces on a baking tray.

  6. Allow the shaped dough to rise for 10-15 minutes.

  7. Brush the tops with egg yolk and score with a fork.

  8. Bake in a preheated oven at 180°C until golden brown.

Tips

  1. Optionally, add cheese filling, such as kaşar cheese, to some of the buns before baking.
