Simple Yeast Bread with Pre-Fermentation

Ingredients

Pre-fermentation

  • 1 cup flour
  • 1 cup warm water
  • 1 teaspoon instant yeast
  • 1 teaspoon sugar

Main dough

  • 2 cups warm water
  • 1 teaspoon instant yeast
  • 1 tablespoon salt
  • 4-5 cups flour

Topping

  • 1 egg (or yogurt and water mixture to ayran consistency)

Preparation

  1. Mix the pre-fermentation ingredients in a bowl and let it rest in a warm place until bubbly and doubled in size.

  2. Combine the pre-ferment with the main dough ingredients, knead the dough until smooth and elastic.

  3. Place the dough in a greased bowl, cover, and let it rise until doubled in size.

  4. Punch down the dough, shape it into loaves or desired forms.

  5. Brush the top with the egg or yogurt-water mixture.

  6. Bake in a preheated oven until golden brown and sounds hollow when tapped.

Notes

  1. The topping can also include egg yolk mixed with flour and water if preferred.
