Simple Yeast Bread with Pre-Fermentation
Ingredients
Pre-fermentation
- 1 cup flour
- 1 cup warm water
- 1 teaspoon instant yeast
- 1 teaspoon sugar
Main dough
- 2 cups warm water
- 1 teaspoon instant yeast
- 1 tablespoon salt
- 4-5 cups flour
Topping
- 1 egg (or yogurt and water mixture to ayran consistency)
Preparation
Mix the pre-fermentation ingredients in a bowl and let it rest in a warm place until bubbly and doubled in size.
Combine the pre-ferment with the main dough ingredients, knead the dough until smooth and elastic.
Place the dough in a greased bowl, cover, and let it rise until doubled in size.
Punch down the dough, shape it into loaves or desired forms.
Brush the top with the egg or yogurt-water mixture.
Bake in a preheated oven until golden brown and sounds hollow when tapped.
Notes
The topping can also include egg yolk mixed with flour and water if preferred.
