Simple Cheese Manakish Flatbread
Ingredients
Dough
- 1 1/2 cups warm water
- 1 tablespoon instant yeast
- 2 tablespoons sugar
- 3 1/4 cups flour
- 1 tablespoon salt
- 1 tablespoon olive oil
Filling
- 2 cups mozzarella cheese
- 1/4 cup za'atar with sesame
Preparation
Sift the flour and salt.
In a mixer bowl, place the water, yeast, and sugar, and let it sit for a few minutes.
Add the oil and half the flour amount, knead to form the dough, gradually adding the remaining flour, and knead for a few minutes to get a smooth soft dough.
Place the dough in an oiled bowl, cover it, and let it rise for an hour until doubled in size.
Prepare a large oven tray and grease it with oil.
Divide the dough into balls, place them in the tray spaced apart, and brush with oil.
Cover the dough and let it rise again until doubled.
Press on the dough to flatten it slightly in the tray and let it rest for a few minutes.
Preheat the oven to 450°F and bake for 5 minutes to set the dough slightly.
Spread the cheese and za'atar, then return to the oven until browned as desired.
