Traditional Arabic Za'atar Flatbread
Ingredients
- 4 cups flour
- 1 tablespoon instant yeast
- 2 teaspoons salt
- 1 teaspoon sugar
- 1/4 cup olive oil
- 1 cup yogurt
- 1 teaspoon dried za'atar
- 3/4 cup warm water
- 1/2 cup olive oil
- 1/4 cup za'atar
- 1 tablespoon sumac
Preparation
In a mixer bowl, place 4 cups of flour, yeast, salt, and sugar. Attach the dough hook and run on low speed for a few seconds to mix the ingredients.
Add oil, yogurt, and za'atar. Knead on medium speed for 2 minutes, then add water and knead until a smooth and soft dough forms. Add more flour if the dough is too soft.
Place the dough in an oiled bowl, cover with plastic wrap, and let it rise in a warm place until doubled in size.
Prepare a shallow baking pan, oil it generously, place the dough in the pan, and spread it with your fingers to cover the bottom.
Cover the dough with plastic wrap and let it rise again in a warm place until doubled. Then, press the dough with your fingers, drizzle with oil, and sprinkle with za'atar and sumac.
Place the oven rack in the middle position and preheat the oven to 180°C.
Bake for 20 minutes.
