Za'atar and Sumac Flatbread

Ingredients

Dough

  • 4 cups flour
  • 1 tablespoon instant yeast
  • 2 teaspoons salt
  • 1 teaspoon sugar
  • 1/4 cup olive oil
  • 1 cup yogurt
  • 1 teaspoon dried za'atar
  • 3/4 cup warm water

Topping

  • 1/2 cup olive oil
  • 1/4 cup za'atar
  • 1 tablespoon sumac

Preparation

  1. In the mixer bowl, place 4 cups of flour, yeast, salt, and sugar. Attach the dough hook and mix on low speed for a few seconds to combine the ingredients.

  2. Add the oil, yogurt, and za'atar. Knead on medium speed for 2 minutes, then add water and knead until a smooth and soft dough forms. Add more flour if the dough is too soft.

  3. Place the dough in an oiled bowl, cover with plastic wrap, and let it rise in a warm place until doubled in size.

  4. Prepare a shallow baking tray, oil it generously, place the dough in it, and spread it with your fingers to cover the bottom.

  5. Cover the dough with plastic wrap and let it rise again in a warm place until doubled. Then, press the dough with your fingers, drizzle with olive oil, and sprinkle with za'atar and sumac.

  6. Place the oven rack in the middle and preheat the oven to 180°C.

  7. Bake for 20 minutes.
