Focaccia with Olives and Herbs

Ingredients

Dough

  • 3 cups flour
  • 1 tablespoon instant yeast
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon sugar
  • 1/4 cup olive oil
  • 1 cup water

Topping

  • 1/4 cup olive oil
  • 1/4 cup chopped green olives
  • 1/4 cup chopped black olives
  • 2 tablespoons dried thyme

Preparation

  1. In a mixer bowl, place 2 cups of flour, add the yeast, baking powder, salt, and sugar, attach the dough hook and mix, then add the oil and water, and run for a few minutes to form a smooth dough while gradually adding the remaining flour, and let the dough rise in a warm place until doubled in size.

  2. Prepare two 8-inch pans and place about a tablespoon of olive oil in each.

  3. Divide the dough into two halves, shape into disks, and place in the pans.

  4. Spread the remaining oil over the surface of the dough.

  5. With your fingertips, make indentations in the dough, spread the olives and thyme over it, cover the pans, and let rise in a warm place until doubled again.

  6. Preheat the oven to 200°C, bake for 15 minutes until golden brown, and serve warm.
