Puffy Pita with Tzatziki

Ingredients

Pita

  • 2 1/3 cup (335g) flour
  • 1 Tbsp salt
  • 3/4 cup + 1 Tbsp (205ml) lukewarm water
  • 1 Tbsp instant yeast
  • 1 Tbsp sugar
  • 1 Tbsp olive oil

Tzatziki

  • 1/2 cucumber, grated and squeezed
  • half a bunch parsley and dill, chopped
  • 2 cloves garlic, minced
  • 1/2 cup (150g) vegan yogurt
  • a glug of olive oil
  • 1/2 lemon, juiced
  • salt and pepper to taste

Preparation

  1. Mix water, sugar, and yeast.

  2. Knead in flour, salt, and oil until a soft dough forms.

  3. Let the dough rest for 1-2 hours.

  4. Shape the dough into 6 discs.

  5. Let rest for 30 minutes.

  6. Bake at 250°C/480°F for 4-5 minutes until fluffy.

  7. Mix all tzatziki ingredients together.

Tips

  1. You can use wholegrain flour instead of regular flour.

  2. These pitas are perfect for dipping into tzatziki or using as a pocket for various fillings.
