Za'atar and Cheese Manakish

Ingredients

Dough

  • 1 1/2 cups warm water
  • 1 tablespoon instant yeast
  • 2 tablespoons sugar
  • 3 1/4 cups flour
  • 1 tablespoon salt
  • 1 tablespoon olive oil

Filling

  • 2 cups mozzarella cheese
  • 1/4 cup za'atar with sesame

Preparation

  1. Sift the flour and salt.

  2. In the mixer bowl, place water, yeast, and sugar, and leave for a few minutes.

  3. Add the oil and half the flour, knead until dough forms, gradually add the remaining flour, and knead for a few minutes to get a smooth soft dough.

  4. Place the dough in an oiled bowl, cover, and leave for an hour to double in size.

  5. Bring a large baking tray and oil it.

  6. Cut the dough into balls, place them on the tray spaced apart, and oil them.

  7. Cover the dough and leave it to double in size.

  8. Press on the dough to flatten it slightly in the tray and leave to rest for a few minutes.

  9. Preheat oven to 450 degrees and bake for 5 minutes to set the dough slightly.

  10. Spread cheese and za'atar, then return to the oven to brown as desired.
