Sesame and Fennel Yeast Bread

Ingredients

Dough

  • 4.5 cups flour
  • 4 teaspoons instant yeast
  • 3 tablespoons sugar
  • 1 tablespoon salt
  • 0.5 cup milk
  • 1 cup water
  • 0.25 cup butter or ghee or olive oil or corn oil

Topping

  • 1 large egg
  • 3 tablespoons roasted sesame
  • 1 tablespoon whole fennel seeds

Preparation

  1. In the mixer bowl, place 4 cups of flour, the yeast, sugar, salt, stir to mix and set aside.

  2. In a small pot, place milk, water and butter, heat until butter melts and mixture is warm, add to flour, attach dough hook and mix until dough forms, add more flour if dough is soft, knead on low speed for 4 to 5 minutes until smooth dough forms, place dough in oiled bowl, cover and let rise in warm place for about an hour or until doubled in size.

  3. Press on dough to release air and let it rest for a few minutes.

  4. Prepare a large tray, shape dough into a large disk and place on tray.

  5. Cover disk with cotton towel and let rise until doubled in size.

  6. Preheat oven to 190°C and set middle rack.

  7. Place egg in small bowl, beat with fork, then use brush to coat bread surface with egg.

  8. Sprinkle sesame and fennel on bread, use knife to make decorative cuts and let rest uncovered for about 5 minutes.

  9. Bake in oven for 25 to 30 minutes until bread is done.
