Chocolate Cinnamon Swirl Loaf

Ingredients

Filling

  • 2 tablespoons soft butter
  • 2 tablespoons fine-grained sugar
  • 2 tablespoons cinnamon
  • 2 tablespoons unsweetened cocoa powder
  • 1 cup chocolate chips
  • 1/2 cup chopped walnuts or hazelnuts

Dough

  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1/4 cup fine-grained sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon instant yeast
  • 1/4 cup dry milk
  • 3 cups flour
  • 1 tablespoon lemon or orange zest
  • 1/2 teaspoon cinnamon
  • 4 tablespoons melted butter
  • 2/3 cup water

Glaze

  • 1 large egg yolk
  • 1 teaspoon milk
  • 1/4 teaspoon vanilla extract

Sugar sauce

  • 1 cup powdered sugar
  • a little milk

Preparation

  1. In a mixer bowl, place 1 cup of flour, milk, yeast, salt, baking powder, sugar, egg, vanilla, orange zest, cinnamon, and butter. Attach the dough hook and mix on medium speed while adding water until a cohesive dough forms. Knead for 5 minutes. Add the remaining flour if the dough is too soft.

  2. Place the dough in an oiled bowl, brush the surface with oil, cover with plastic wrap, and let it rise in a warm place for an hour until doubled in size.

  3. Prepare a loaf pan and set it aside.

  4. On a floured surface, roll out the dough into a rectangle about 1 cm thick.

  5. Using a wide plastic spoon, spread the soft butter over the rectangle to cover it completely.

  6. Sprinkle the sugar, cocoa powder, cinnamon, chocolate chips, and nuts over it. Roll up the dough with the filling to form a log and seal the ends. Place the log in the loaf pan with the sealed side down.

  7. Cover the pan with plastic wrap and let it rise in a warm place until doubled in size.

  8. Preheat the oven to 180°C and position the rack in the middle.

  9. For the glaze, in a small bowl, mix egg yolk, milk, and vanilla with a fork. Brush the log with this glaze using a wide brush.

  10. Place the loaf pan in the oven and bake for 25 minutes until golden brown.

  11. Remove the loaf from the oven and let it cool on a wire rack until completely cool.

  12. Remove the chocolate loaf from the pan and place it on a serving dish. Drizzle with sugar sauce and serve.

  13. For the sugar sauce, in a deep bowl, place powdered sugar and gradually add milk while stirring with a fork until a smooth sauce with honey-like consistency is formed. Use immediately.
