Mini Apple Cheese Tart

Ingredients

Dough

  • 1/2 cup flour
  • 1 tsp baking powder
  • 1/8 tsp salt
  • 1/2 cup powdered sugar
  • 1 large egg
  • 1/2 cup butter at room temperature
  • 4 cubes cream cheese at room temperature

Apple mixture

  • 2 large apples
  • 1 tbsp cinnamon
  • 2 tbsp sugar
  • 1 tsp lemon zest
  • 1 tbsp lemon juice

Cheese mixture

  • 4 cubes cream cheese at room temperature
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/4 cup fine-grained sugar

Top layer

  • 1 large can of cherry or blueberry pie filling

Preparation

  1. Heat the oven to 180 degrees and set the middle rack. Use mini cupcake molds.

  2. For the dough: In a mixer bowl, put flour, baking powder, salt, sugar, egg, butter, cheese, attach the beater and mix to get a smooth dough.

  3. Shape the dough into small balls. Place them in the molds and press in the center to cover the bottom and sides. Set aside.

  4. For the apple mixture: Peel and grate the apples. In a saucepan, put apples, cinnamon, sugar, lemon zest and juice, cook on low heat until apples dry. Spread over the molds.

  5. For the cheese mixture: In a deep bowl, put cheese, egg, vanilla, sugar, whisk with a beater until smooth and spread over the molds.

  6. Bake the tart for 15-20 minutes until golden. Let it cool.

  7. Fill the top of the tart with cherry and serve.
