Mini Apple Cheese Tart
Ingredients
Dough
- 1/2 cup flour
- 1 tsp baking powder
- 1/8 tsp salt
- 1/2 cup powdered sugar
- 1 large egg
- 1/2 cup butter at room temperature
- 4 cubes cream cheese at room temperature
Apple mixture
- 2 large apples
- 1 tbsp cinnamon
- 2 tbsp sugar
- 1 tsp lemon zest
- 1 tbsp lemon juice
Cheese mixture
- 4 cubes cream cheese at room temperature
- 1 large egg
- 1 tsp vanilla extract
- 1/4 cup fine-grained sugar
Top layer
- 1 large can of cherry or blueberry pie filling
Preparation
Heat the oven to 180 degrees and set the middle rack. Use mini cupcake molds.
For the dough: In a mixer bowl, put flour, baking powder, salt, sugar, egg, butter, cheese, attach the beater and mix to get a smooth dough.
Shape the dough into small balls. Place them in the molds and press in the center to cover the bottom and sides. Set aside.
For the apple mixture: Peel and grate the apples. In a saucepan, put apples, cinnamon, sugar, lemon zest and juice, cook on low heat until apples dry. Spread over the molds.
For the cheese mixture: In a deep bowl, put cheese, egg, vanilla, sugar, whisk with a beater until smooth and spread over the molds.
Bake the tart for 15-20 minutes until golden. Let it cool.
Fill the top of the tart with cherry and serve.
