Spooky Halloween Chocolate Bat Muffins
Ingredients
Muffin batter
- 150 g softened butter
- 150 g sugar
- 1 tsp vanilla extract
- 3 large eggs
- 120 g all-purpose flour
- 2 tbsp baking cocoa
- 2 tsp baking powder
- a pinch of salt
- 80 ml milk
Frosting
- 200 g cream cheese
- 40 g powdered sugar
- 125 g softened butter
- 1 tsp vanilla extract
Bat decorations
- 2 tbsp powdered sugar
- 1-2 tsp water
- 24 chocolate cream cookies
- 24 candy eyes
Preparation
Cream softened butter with sugar and vanilla extract, then gradually mix in eggs. Line a muffin tin with paper liners
Whisk together flour, baking cocoa, baking powder, and salt. Alternately add the dry ingredients and milk to the batter, mixing well. Preheat oven to 180°C (160°C convection). Divide batter evenly among the liners using an ice cream scoop or two spoons. Bake for about 20 minutes. Let cool completely
Beat cream cheese, powdered sugar, softened butter, and vanilla extract until smooth. Transfer to a piping bag fitted with a star tip and pipe a dollop of frosting onto each cooled muffin. Chill the muffins
Whisk powdered sugar with 1-2 teaspoons water until smooth. If too runny, add more powdered sugar. Transfer to a piping bag and cut a small hole at the tip
Place two dots of icing on each of 12 chocolate cream cookies, then add two candy eyes to form bats. Let the bats dry
Attach a bat cookie to each frosted muffin using a small amount of the remaining icing
