Carrot Cake with Crunchy Chocolate Glaze
Ingredients
- 3 eggs
- 3 medium chopped carrots (250g)
- 1 cup oil
- 2 cups sugar
- 2 cups all-purpose flour
- a pinch of salt
- 1 tablespoon baking powder
Glaze
- 1 1/2 cups sugar
- 1 1/2 cups chocolate powder
- 2 tablespoons butter
- 1/2 cup milk
Preparation
Place the eggs, chopped carrots, oil, and sugar in a blender.
Blend everything for about 3 minutes.
Pour the mixture into a bowl and add the flour, baking powder, and salt.
Mix with a wire whisk until well homogeneous.
Pour into a greased and floured pan.
Bake in a preheated oven at 180Β°C for about 45 minutes.
For the glaze, in a pan, add sugar, chocolate powder, butter, and milk.
Cook over medium heat, stirring constantly until it boils.
Continue stirring after boiling until it releases from the pan bottom.
Turn off heat and spread over the cake.
Tips
Do not let the glaze cool in the pan, as it may harden.
Wait for the cake to cool before cutting and serving.
