Fluffy Carrot Cake with Chocolate Volcano Topping

Ingredients

Carrot cake

  • 2 medium carrots
  • 4 large eggs
  • 1 cup oil
  • 2 cups sugar
  • 3 cups all-purpose flour
  • 1 heaping tablespoon baking powder

Chocolate volcano sauce

  • 2 cans sweetened condensed milk
  • 1 tablespoon unsalted butter
  • 6 tablespoons cocoa powder
  • 1 can heavy cream

Preparation

Carrot cake

  1. Blend eggs, carrots, and oil in a blender until smooth

  2. In a bowl, combine flour, sugar, and baking powder

  3. Gradually mix the blended mixture into the dry ingredients using a whisk

  4. Pour the batter into a greased and floured baking pan

  5. Bake in a preheated oven at 180Β°C for about 40 minutes

Chocolate volcano sauce

  1. Combine sweetened condensed milk, unsalted butter, cocoa powder, and heavy cream in a saucepan

  2. Cook over low heat, stirring constantly, until the mixture thickens and pulls away from the bottom of the pan (about 10 minutes)

  3. Pour the sauce over the baked cake
