Fluffy Carrot Cake with Chocolate Volcano Topping
Ingredients
Carrot cake
- 2 medium carrots
- 4 large eggs
- 1 cup oil
- 2 cups sugar
- 3 cups all-purpose flour
- 1 heaping tablespoon baking powder
Chocolate volcano sauce
- 2 cans sweetened condensed milk
- 1 tablespoon unsalted butter
- 6 tablespoons cocoa powder
- 1 can heavy cream
Preparation

Blend eggs, carrots, and oil in a blender until smooth
In a bowl, combine flour, sugar, and baking powder
Gradually mix the blended mixture into the dry ingredients using a whisk
Pour the batter into a greased and floured baking pan
Bake in a preheated oven at 180Β°C for about 40 minutes
Chocolate volcano sauce
Combine sweetened condensed milk, unsalted butter, cocoa powder, and heavy cream in a saucepan
Cook over low heat, stirring constantly, until the mixture thickens and pulls away from the bottom of the pan (about 10 minutes)
Pour the sauce over the baked cake
