Carrot Cake with Brigadeiro Frosting

Ingredients

Cake

  • 4 eggs
  • 3 chopped carrots
  • 1 cup vegetable oil
  • 2 cups granulated sugar
  • 3 cups all-purpose flour
  • 1 tablespoon baking powder
  • Margarine, for greasing
  • All-purpose flour, for dusting

Frosting

  • 2 cans sweetened condensed milk
  • 2 tablespoons unsalted margarine
  • 1 cup cocoa powder
  • 150g heavy cream

Preparation

Cake

  1. Blend eggs, chopped carrots, vegetable oil, and sugar in a blender on medium speed

  2. Transfer to a bowl and stir in all-purpose flour and baking powder until just combined

  3. Pour the batter into a greased and floured small cake pan

  4. Bake in a preheated medium oven for 30 minutes or until a toothpick inserted in the center comes out clean

Frosting

  1. Combine sweetened condensed milk, unsalted margarine, and cocoa powder in a saucepan

  2. Cook over medium heat, stirring constantly, until the mixture pulls away from the bottom of the pan

  3. Remove from heat and stir in heavy cream until smooth

Assembly

  1. Remove the cake from the oven and spread the frosting over the warm cake

  2. Let the cake cool, then serve
