Easy Chocolate Cake with Chocolate Drink Powder Frosting

Ingredients

  • 2 eggs
  • 1 cup vegetable oil
  • 1 cup milk (or room temperature water)
  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 4 tablespoons unsweetened cocoa powder (50% cocoa content)
  • 1 tablespoon baking powder (such as Royal)

Frosting

  • 1 (14-ounce) can sweetened condensed milk
  • 1 cup heavy cream
  • 2 tablespoons unsalted margarine or butter
  • 5 tablespoons chocolate drink powder (such as Tody)

Preparation

  1. Grease a cake pan with butter and sprinkle with cocoa powder, tapping off the excess

  2. Preheat the oven to 350Β°F (180Β°C)

  3. In a blender, blend eggs, milk (or water), oil, and sugar for 2 minutes

  4. Add flour and cocoa powder to the blender mixture and stir with a spoon until just combined; do not blend again

  5. Gently fold in baking powder

  6. Pour batter into the prepared pan and bake for 35 to 40 minutes, or until a toothpick inserted comes out clean

Frosting

  1. In a saucepan, combine sweetened condensed milk, heavy cream, margarine (or butter), and chocolate drink powder

  2. Cook over low heat, stirring constantly, until the mixture comes to a boil

  3. Remove from heat and let cool; the frosting will thicken as it cools
