Easy Chocolate Cake with Chocolate Drink Powder Frosting
Ingredients
- 2 eggs
- 1 cup vegetable oil
- 1 cup milk (or room temperature water)
- 2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 4 tablespoons unsweetened cocoa powder (50% cocoa content)
- 1 tablespoon baking powder (such as Royal)
Frosting
- 1 (14-ounce) can sweetened condensed milk
- 1 cup heavy cream
- 2 tablespoons unsalted margarine or butter
- 5 tablespoons chocolate drink powder (such as Tody)
Preparation
Grease a cake pan with butter and sprinkle with cocoa powder, tapping off the excess
Preheat the oven to 350Β°F (180Β°C)
In a blender, blend eggs, milk (or water), oil, and sugar for 2 minutes
Add flour and cocoa powder to the blender mixture and stir with a spoon until just combined; do not blend again
Gently fold in baking powder
Pour batter into the prepared pan and bake for 35 to 40 minutes, or until a toothpick inserted comes out clean
Frosting
In a saucepan, combine sweetened condensed milk, heavy cream, margarine (or butter), and chocolate drink powder
Cook over low heat, stirring constantly, until the mixture comes to a boil
Remove from heat and let cool; the frosting will thicken as it cools
