Fluffy Carrot Cake with Molten Chocolate Volcano
Ingredients
Cake
- 2 medium carrots
- 4 large eggs
- 1 cup oil
- 2 cups sugar
- 3 cups all-purpose flour
- 1 heaping tablespoon baking powder
Chocolate sauce
- 2 cans sweetened condensed milk
- 1 tablespoon unsalted butter
- 6 tablespoons cocoa powder
- 1 can heavy cream
Preparation
Cake
Place eggs, carrots, and oil in a blender and blend until smooth
In a bowl, combine flour, sugar, and baking powder
Gradually mix the blended liquid into the dry ingredients using a whisk until just combined
Pour the batter into a greased and floured baking pan
Bake in a preheated oven at 180Β°C (350Β°F) for about 40 minutes
Chocolate sauce
Combine sweetened condensed milk, butter, cocoa powder, and heavy cream in a saucepan over low heat
Cook, stirring constantly, until the mixture thickens and pulls away from the bottom of the pan, about 10 minutes
Pour the sauce over the cake and serve
