Fluffy Carrot Cake with Chocolate Frosting
Ingredients
Cake
- 3 medium carrots, chopped
- 4 eggs
- 1 cup oil
- 2 cups all-purpose flour
- 1 1/2 cups sugar
- 1 teaspoon vanilla extract
- 1 tablespoon baking powder
Frosting
- 1 can (14 oz) sweetened condensed milk
- 1 tablespoon butter
- 4 tablespoons cocoa powder
- 1/2 cup heavy cream (optional)
Preparation
Blend eggs, carrots, and oil in a blender
Sift flour into a bowl and mix in sugar
Add the blended mixture to the flour and mix well
Gently stir in vanilla extract and baking powder
Pour the batter into a greased baking pan
Bake in a preheated medium-temperature oven for about 35 minutes
Frosting
Mix sweetened condensed milk, butter, cocoa powder, and heavy cream (if using) in a saucepan
Cook over low heat, stirring constantly, until thickened
Tips
Adding heavy cream helps reduce sweetness and prevents the frosting from being too cloying
