Fluffy Carrot Cake with Chocolate Frosting

Ingredients

Cake

  • 3 medium carrots, chopped
  • 4 eggs
  • 1 cup oil
  • 2 cups all-purpose flour
  • 1 1/2 cups sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon baking powder

Frosting

  • 1 can (14 oz) sweetened condensed milk
  • 1 tablespoon butter
  • 4 tablespoons cocoa powder
  • 1/2 cup heavy cream (optional)

Preparation

  1. Blend eggs, carrots, and oil in a blender

  2. Sift flour into a bowl and mix in sugar

  3. Add the blended mixture to the flour and mix well

  4. Gently stir in vanilla extract and baking powder

  5. Pour the batter into a greased baking pan

  6. Bake in a preheated medium-temperature oven for about 35 minutes

Frosting

  1. Mix sweetened condensed milk, butter, cocoa powder, and heavy cream (if using) in a saucepan

  2. Cook over low heat, stirring constantly, until thickened

Tips

  1. Adding heavy cream helps reduce sweetness and prevents the frosting from being too cloying
