Brazilian Crazy Cake with Creamy Chocolate Filling
Ingredients
Cake
- 1 cup warm milk
- 3 eggs
- 4 tablespoons melted butter
- 2 cups sugar
- 1 cup cocoa powder
- 2 cups all-purpose flour
- 1 tablespoon baking powder
Topping
- 1 cup sugar
- 3 tablespoons cornstarch
- 5 tablespoons cocoa powder
- 1 cup water
- 3 tablespoons butter
- 1 tablespoon vanilla extract
Filling
- 1 can sweetened condensed milk
- 1 small box heavy cream
- 3 tablespoons cocoa powder
Syrup
- 500ml water
- 100ml sweetened condensed milk
Ganache
- 300g milk chocolate, melted
- 1/2 small box heavy cream
Preparation
Cake
Blend all cake ingredients except baking powder until combined
Add baking powder and blend for 15 seconds
Pour the batter into a greased and floured bundt pan
Bake at 180 degrees Celsius for about 40 minutes in a preheated oven
Filling
Mix the filling ingredients in a saucepan, bring to a boil, simmer for 5 minutes, then remove from heat and let cool
Assembly
Cut the cake into layers and soak with a syrup made by mixing 500ml water and 100ml sweetened condensed milk
Layer cake and filling alternately, pouring syrup over each layer
Ganache
Mix the melted milk chocolate and half a box of heavy cream, then pour over the cake
