Brazilian Crazy Cake with Creamy Chocolate Filling

Ingredients

Cake

  • 1 cup warm milk
  • 3 eggs
  • 4 tablespoons melted butter
  • 2 cups sugar
  • 1 cup cocoa powder
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder

Topping

  • 1 cup sugar
  • 3 tablespoons cornstarch
  • 5 tablespoons cocoa powder
  • 1 cup water
  • 3 tablespoons butter
  • 1 tablespoon vanilla extract

Filling

  • 1 can sweetened condensed milk
  • 1 small box heavy cream
  • 3 tablespoons cocoa powder

Syrup

  • 500ml water
  • 100ml sweetened condensed milk

Ganache

  • 300g milk chocolate, melted
  • 1/2 small box heavy cream

Preparation

Cake

  1. Blend all cake ingredients except baking powder until combined

  2. Add baking powder and blend for 15 seconds

  3. Pour the batter into a greased and floured bundt pan

  4. Bake at 180 degrees Celsius for about 40 minutes in a preheated oven

Filling

  1. Mix the filling ingredients in a saucepan, bring to a boil, simmer for 5 minutes, then remove from heat and let cool

Assembly

  1. Cut the cake into layers and soak with a syrup made by mixing 500ml water and 100ml sweetened condensed milk

  2. Layer cake and filling alternately, pouring syrup over each layer

Ganache

  1. Mix the melted milk chocolate and half a box of heavy cream, then pour over the cake
