Easy Carrot Cake with Crunchy Chocolate Glaze

Ingredients

  • 3 eggs
  • 3 medium carrots, chopped (250g)
  • 1 cup oil
  • 2 cups sugar
  • 2 cups all-purpose flour
  • a pinch of salt
  • 1 tablespoon baking powder

Glaze

  • 1 1/2 cups sugar
  • 1 1/2 cups cocoa powder
  • 2 tablespoons butter
  • 1/2 cup milk

Preparation

  1. Place the eggs, chopped carrots, oil, and sugar in a blender

  2. Blend for about 3 minutes

  3. Pour the mixture into a bowl and add the flour, baking powder, and salt

  4. Mix with a wire whisk until well combined

  5. Pour the batter into a greased and floured pan

  6. Bake in a preheated oven at 180Β°C for about 45 minutes

Glaze

  1. In a saucepan, combine sugar, cocoa powder, butter, and milk

  2. Cook over medium heat, stirring constantly, until boiling

  3. Continue stirring until the mixture pulls away from the bottom of the pan

  4. Immediately spread the glaze over the warm cake

Finishing

  1. Let the cake cool completely

  2. Cut into slices and serve immediately
