Italian Almond Biscotti Cookies
Ingredients
- 100g melted butter (1/2 cup)
- 2 eggs
- 1/2 tablespoon vanilla extract
- 2 tablespoons honey
- 150g sugar (3/4 cup)
- 1 cup almonds or to taste
- 375g all-purpose flour (3 cups)
- 1/2 teaspoon salt
- 1 teaspoon baking powder
Preparation
In a bowl, add the melted butter, eggs, vanilla extract, and honey and mix everything together
Add the sugar and almonds and mix well
Add the all-purpose flour in two parts, along with the salt and baking powder, and mix until well integrated
Add the remaining flour and continue mixing until the flour is fully incorporated
Sprinkle some flour on the work surface and knead lightly to remove air, noting that the dough may be sticky so use extra flour as needed
Divide the dough in half and shape into cylinders
Place on a baking sheet lined with parchment paper or greased and floured, and bake in a preheated oven at 180°C for 35 minutes
Remove from the oven and let cool completely
Once cool, make cuts into the cylinders, place the pieces back on the baking sheet, and bake again at 180°C for 20 minutes or until golden brown
Remove from the oven and let cool before serving
