Quick Fluffy Coconut Cookies in 20 Minutes

Ingredients

  • 200 g coconut flakes
  • 80 g sugar
  • 1 packet vanilla sugar
  • 1 pinch salt
  • 50 g all-purpose flour
  • 2 tsp baking powder
  • 50 g softened butter
  • 2 medium eggs

Preparation

  1. Preheat the oven to 180°C (convection: 160°C) and line a baking sheet with parchment paper

  2. Mix the dry ingredients in a bowl

  3. Add the softened butter and eggs, then stir briefly until all ingredients are well combined

  4. Take a portion of dough using an ice cream scoop or tablespoon

  5. Press the dough together slightly and roll into a small ball

  6. Place the balls on the baking sheet and flatten slightly

  7. Bake in the preheated oven for 10-12 minutes

  8. Let the cookies cool on the baking sheet

  9. The cookies will firm up as they cool; if they appear too soft at first, that is correct

Tips

  1. Melt 50 g chocolate in a double boiler

  2. Drizzle thin lines of melted chocolate over the cookies using a spoon
