Quick Fluffy Coconut Cookies in 20 Minutes
Ingredients
- 200 g coconut flakes
- 80 g sugar
- 1 packet vanilla sugar
- 1 pinch salt
- 50 g all-purpose flour
- 2 tsp baking powder
- 50 g softened butter
- 2 medium eggs
Preparation
Preheat the oven to 180°C (convection: 160°C) and line a baking sheet with parchment paper
Mix the dry ingredients in a bowl
Add the softened butter and eggs, then stir briefly until all ingredients are well combined
Take a portion of dough using an ice cream scoop or tablespoon
Press the dough together slightly and roll into a small ball
Place the balls on the baking sheet and flatten slightly
Bake in the preheated oven for 10-12 minutes
Let the cookies cool on the baking sheet
The cookies will firm up as they cool; if they appear too soft at first, that is correct

Drizzle thin lines of melted chocolate over the cookies using a spoon
