Authentic Belgian Waffles with Fresh Berries and Powdered Sugar

Ingredients

  • 120g softened butter
  • 70g sugar
  • 1 packet vanilla sugar (optional)
  • 2 large eggs
  • 250g all-purpose flour (Type 405; alternatively spelt flour Type 630)
  • 1 teaspoon baking powder
  • 350ml milk
  • a pinch of salt

Toppings

  • powdered sugar
  • fresh fruit
  • vanilla ice cream

Preparation

  1. Beat softened butter and sugar until creamy for several minutes

  2. Separate the eggs and add the egg yolks, mixing well

  3. Mix the flour and baking powder together

  4. Alternately stir the flour mixture and milk into the batter

  5. Beat egg whites with salt until stiff

  6. Fold the egg whites into the batter

  7. Let the batter rest for 5-10 minutes

  8. Meanwhile, preheat the waffle iron and grease it

  9. Cook the batter in the preheated waffle iron until golden and crisp

  10. Top the waffles with powdered sugar, fresh fruit, and/or vanilla ice cream and serve immediately

Tips

  1. You can skip separating the eggs and add the whole eggs to the butter-sugar mixture. However, if you fold in the separately beaten egg whites, the waffles will be extra fluffy

  2. Store leftover waffles airtight and consume within 2 days

  3. To reheat, pop in the toaster for a short time
