Simple Vanilla Yogurt Sponge Cake
Ingredients
- 1 cup all-purpose flour
- 1 tablespoon cornstarch
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 2 tablespoons yogurt
- 1 tablespoon corn oil
- 1 teaspoon white vinegar
- 4 large eggs
- 4/3 cup sugar
Preparation
Adjust the middle rack in the oven and preheat the oven to 180 degrees Celsius.
Prepare two round pans of 8 inches in size and place parchment paper in the bottom and sides.
On a piece of paper or in a deep plate, sift the flour, cornstarch, salt, and baking powder and set aside.
In a bowl, place the yogurt, oil, vinegar, and vanilla, stir to mix and set aside.
In the mixer bowl, place the eggs and sugar, attach the whisk attachment, and beat on high speed for a few minutes until the eggs become fluffy and light yellow in color.
Add the yogurt mixture and beat until incorporated.
Add half the amount of flour and, using a wide plastic spoon, stir until the flour disappears.
Add the remaining flour and stir until it disappears then pour the cake batter into the pans.
Place the pans in the oven and bake for 15 to 17 minutes until the cake is done and spongy to the touch on its surface then test with a wooden skewer.
Leave the pans on the rack for a few minutes then remove the cake and let it cool completely.
