Homemade Apple Cake with Lemon Zest

Ingredients

  • 2 cups flour
  • 1 tablespoon cornstarch
  • 2 teaspoons baking powder
  • 1 pinch salt
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/3 cups fine sugar
  • 1 1/3 cups milk
  • 1/4 cup melted butter
  • 1/4 cup corn oil
  • 1 tablespoon lemon zest
  • 1/4 cup lemon juice
  • 2 medium apples

Preparation

  1. Preheat the oven to 180°C and prepare a 9-inch square pan by lining it with parchment paper or greasing and flouring it.

  2. Cut the apples into small 2 cm cubes and set aside.

  3. Sift the flour, cornstarch, baking powder, and salt together and set aside.

  4. In a bowl, beat the eggs, vanilla, and sugar with an electric mixer until light in color.

  5. Add the milk and continue beating.

  6. Add the melted butter and corn oil, and continue beating.

  7. Add the lemon zest and lemon juice, and continue beating.

  8. Add the dry ingredients and stir until combined.

  9. Add the apples and stir to distribute evenly in the batter.

  10. Pour the batter into the prepared pan.

  11. Bake for 30-35 minutes until golden brown, then let it cool before serving.

  12. Sprinkle with powdered sugar, cut into squares, and serve.
