Luxurious Apple Cake with Buttercream

Ingredients

Cake mixture

  • 2 cups flour
  • 2 teaspoons baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 teaspoons cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 cup soft butter
  • 2 cups light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 4 large apples, peeled and sliced thinly

Buttercream

  • 4 large egg whites
  • 1 cup light brown sugar
  • 1/4 teaspoon vanilla
  • 1/2 cup soft butter, cut into pieces

Garnish

  • Sliced toasted almonds

Preparation

  1. Set the oven rack in the middle and preheat the oven to 180°C.

  2. Prepare three 8-inch cake pans by greasing with butter, lining the bottoms with parchment paper, and dusting with flour.

  3. For the cake mixture, sift together the flour, baking soda, baking powder, salt, cinnamon, and ginger onto a sheet of parchment or into a deep bowl.

  4. In a mixer bowl, place the butter and sugar and use the paddle attachment to mix on medium speed for 3 minutes until light and creamy. Add the eggs and vanilla, mix until incorporated. Add the dry mixture and mix for 1 minute. Fold in the apples with a wide plastic spatula.

  5. Divide the batter evenly among the prepared pans and smooth the tops.

  6. Bake for 30 to 40 minutes. Test for doneness with a wooden toothpick; it should come out clean.

  7. For the buttercream, in a heatproof bowl, combine egg whites and sugar and heat over simmering water, stirring until sugar dissolves. Remove from heat and whip with a mixer until stiff peaks form and mixture cools. Gradually add softened butter and vanilla, beating until smooth and creamy.

  8. Once the cakes are cooled, frost with the buttercream.

  9. Garnish with sliced toasted almonds.
