Sour Cream Cake with Cinnamon
Ingredients
- 2 1/2 cups flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 1/2 cups fine grain sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 cup sour cream
- 4/3 cup softened butter
Cinnamon mixture
- 1/4 cup fine grain sugar
- 1 tablespoon cinnamon
- 1/2 cup chopped walnuts
Preparation
Set the rack in the middle of the oven and preheat the oven to 180°C
Prepare a tube pan by greasing it with butter and flouring it
On a piece of parchment paper, sift the flour, baking soda, and baking powder, then set aside
In the mixer bowl, place the sugar, eggs, and vanilla, attach the whisk attachment, and turn on the mixer on medium speed until the egg volume doubles and color lightens
Add the sour cream and butter, then turn on the mixer on medium speed until ingredients are combined and mixture is fluffy and creamy, and add the flour mixture, mixing for one minute
For the cinnamon mixture, in a deep bowl, place sugar, cinnamon, and walnuts, and stir to combine
Pour half of the cake batter into the pan, spread the cinnamon mixture, and then spread the remaining batter
Bake the cake for 40 to 45 minutes, and test doneness with a wooden skewer, which should come out clean
Remove the cake from the oven, place the pan on a wire rack, let it cool slightly, then invert onto the rack, and let the cake cool completely before serving
