Honey and Spice Cake

Ingredients

Cake mixture

  • 1 1/2 cups flour
  • 1/8 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ginger
  • 1/4 teaspoon ground cloves
  • 1/4 cup light brown sugar
  • 1/2 cup shortening
  • 1/2 cup honey
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup water

Decoration

  • Powdered sugar, ground spices

Preparation

  1. Preheat the oven to 180°C and set the middle rack. Prepare a 9-inch round pan by greasing with butter and dusting with flour.

  2. In a deep bowl, sift together the flour, salt, baking powder, baking soda, cinnamon, ginger, and cloves.

  3. In a mixer bowl, place the sugar and shortening. Use the whisk attachment and mix on medium speed until light and fluffy. Add the honey and mix until well combined.

  4. Add the egg and vanilla extract, and mix until fully incorporated.

  5. Add the flour mixture and water, beat on medium speed for one minute, then pour the batter into the prepared pan.

  6. Bake for 40 minutes, then let cool completely on a wire rack.

  7. Place the cake on a serving plate and decorate with powdered sugar and ground spices.
