Banana and Walnut Cake

Ingredients

  • 3 cups flour
  • 2 cups fine granulated sugar
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground cloves
  • 3/4 cup soft butter
  • 2 cups mashed banana
  • 1 cup chopped pineapple
  • 3 large eggs
  • 2 teaspoons vanilla extract

  • Powdered sugar

Preparation

  1. Adjust the middle rack in the oven and preheat to 180°C

  2. Prepare a 9-inch pan by greasing with butter and flouring it

  3. In a deep bowl, place flour, sugar, baking soda, cinnamon, salt, and cloves, then mix with a hand whisk until combined

  4. In a mixer bowl, place butter, mashed banana, chopped pineapple, eggs, and vanilla extract

  5. Attach the whisk to the mixer and run on medium speed for one minute

  6. Add the flour mixture and run the mixer for one minute or until combined, then pour into the pan

  7. Place the pan in the oven and bake for 60 to 70 minutes until done, testing with a toothpick that comes out clean

  8. Remove from the oven and place on a wire rack to cool for five minutes

  9. Invert the cake onto the rack and let it cool completely

  10. Place the cake on a serving plate and dust with powdered sugar
