Apricot Raisin Nut Cake

Ingredients

  • 1/2 cup chopped dried apricot
  • 1/2 cup raisins
  • 1/4 cup milk

Cake mixture

  • 1/2 cup softened butter
  • 1 cup powdered sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • a pinch of salt
  • 1.5 cups flour
  • 1/4 cup chopped nuts

Sugar glaze

  • 1 cup powdered sugar
  • 1 tablespoon milk

Garnish

  • chopped apricot
  • nuts

Preparation

  1. Set the middle oven rack and preheat the oven to 180°C.

  2. Use a 9x5x3 inch loaf pan, line it with parchment paper, and set aside.

  3. In a bowl, place the chopped dried apricot, raisins, and milk, and set aside for a few minutes.

  4. In a mixer bowl, place the softened butter and powdered sugar, use the paddle attachment and mix for a few minutes until light and fluffy.

  5. Add one egg and the vanilla extract, mix until incorporated, then add the second egg and mix.

  6. Sift the flour, baking powder, and salt, add to the mixture, and mix until the flour disappears.

  7. Add the apricot-raisin-milk mixture and fold in gently with a wide spatula, avoiding overmixing.

  8. Pour the batter into the prepared pan and bake for 60 to 70 minutes until done. Let it cool in the pan for 10 minutes, then remove and cool completely on a rack.

  9. For the sugar glaze, in a bowl, place the powdered sugar, add a little milk, and stir to make a smooth glaze, adding more milk as needed. Spread the glaze on the cake and garnish with chopped apricot and nuts.
