Nantua Almond Orange Cake
Ingredients
Cake
- 3 large eggs
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 1/2 cup softened butter
- 3/4 cup fine granulated sugar
- 1 1/4 cups finely ground almonds
- 3 tablespoons orange juice
- 1/3 cup flour
- a pinch of salt
- 1/4 teaspoon baking powder
Soaking
- 2 tablespoons orange juice
Glaze
- 1.5 cups powdered sugar
- 3 tablespoons orange juice
Preparation
Preheat the oven to 180°C. Grease an 8-inch round cake pan with butter, dust with flour, and line the bottom with parchment paper.
Place the eggs in a cup, add vanilla and almond extract, beat lightly with a fork, and set aside.
In a deep bowl, beat butter and sugar with an electric mixer until very smooth and light in color.
Gradually add the egg mixture while continuing to beat until fully incorporated.
Add ground almonds and mix on low speed until combined.
Add orange juice and mix until combined.
Add flour, salt, and baking powder, and mix until combined.
Pour the batter into the prepared pan.
Bake in the oven for 35-40 minutes until golden brown.
For soaking: Remove the cake from the oven and brush the surface with orange juice using a brush.
Remove the cake from the pan and let it cool completely.
For glaze: In a cup, mix powdered sugar with orange juice gradually until you get a thick sauce. Add more juice if needed. Spread the glaze over the cake with a knife to cover completely, ensuring a thick layer.
Let the cake set, then serve.
Tips
The cake tastes better if refrigerated overnight before serving.
