Raisin and Orange Yogurt Cake

Ingredients

  • 3 cups flour
  • 2 tablespoons baking powder
  • 1/2 teaspoon salt
  • 2 cups raisins
  • 1/2 cup orange juice
  • 1/2 cup yogurt
  • 4 large eggs
  • 1 cup sugar
  • 1 cup corn oil
  • 1 tablespoon orange zest

Preparation

  1. Position the rack in the middle of the oven and preheat the oven to 180°C.

  2. Prepare a tube pan by greasing it with butter and dusting with flour.

  3. On a piece of parchment paper or in a deep bowl, sift about 2.5 cups of flour, baking powder, and salt.

  4. Add the raisins to the remaining flour and toss lightly with your fingertips to coat completely.

  5. Add orange juice to the yogurt and stir to mix well.

  6. In the mixer bowl, place the eggs, vanilla, and sugar. Attach the whisk attachment and run the mixer on medium speed for 5 minutes until the egg volume doubles and becomes light yellow. With the mixer running, gradually add the oil until fully incorporated. Alternately add the yogurt mixture with the flour and mix until a smooth cake batter forms. Add the orange zest.

  7. Remove the bowl from the mixer and add the flour-raisin mixture. Using a plastic spoon, stir the cake batter until well combined with the raisins.

  8. Pour the cake batter into the pan.

  9. Place the pan in the oven for 40 to 45 minutes. Test for doneness with a wooden skewer; it should come out clean.

  10. Remove the cake from the oven and immediately invert onto a wire rack to cool completely.
