Dried Fruit Cake with Orange Glaze
Ingredients
Dried fruit mix
- 3 chopped dates
- 3 chopped apricots
- 3 chopped figs
- 3 chopped quinces
- 1/2 cup raisins
- 1/2 cup black raisins
Cake mix
- 3 cups flour
- 1/8 teaspoon salt
- 1 tablespoon baking powder
- 1 cup softened butter
- 2 cups fine-grained sugar
- 4 large eggs
- 2 teaspoons vanilla extract
- 1 cup whole milk
Qamar al-din sauce
- 3 cups powdered sugar
- 1 teaspoon orange zest
- 1-2 drops orange food coloring
- 2 tablespoons milk
For serving

Preparation
Adjust the middle rack in the oven and preheat to 180°C
Grease a round tube pan with shortening or butter, dust with flour, and set aside
In a bowl, place the dried fruits, sprinkle with 1/4 cup flour, mix well to coat all pieces, sift to remove excess flour, and set aside
In a suitable bowl or on paper, sift the flour, salt, and baking powder, and set aside
In the mixer bowl, place butter and sugar, attach the paddle attachment, and beat on medium speed until creamy
Gradually add the eggs, one at a time, beating until incorporated, then add the vanilla
Add half of the flour mixture, then half of the milk, beat on low speed until flour disappears, then add the remaining milk and flour
Beat on medium speed for 1 minute until smooth, add the dried fruit mix and fold gently to combine, then pour the batter into the prepared pan
Bake for 50 minutes and test for doneness
Remove the pan from the oven, let it cool on a wire rack for a few minutes, then remove the cake from the pan
For the Qamar al-Din sauce, in a bowl, combine powdered sugar, orange zest, and orange food coloring, gradually add milk while stirring to achieve the desired consistency, then spread over the cake and add mixed fruits for serving
