Almond and Walnut Cake

Ingredients

  • 1 cup flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3 large eggs
  • 1/4 cup cream cheese
  • 1/2 cup butter
  • 1/2 cup fine-grained sugar
  • 1 tablespoon lemon zest

Topping

  • 3/4 cup fine coconut
  • 3/4 cup ground almonds
  • 1/2 cup brown sugar
  • 1/4 cup chilled butter

Preparation

  1. Position the rack in the middle of the oven and preheat the oven to 180°C

  2. Prepare a 9-inch pan by greasing it with butter and dusting with flour

  3. On a piece of parchment paper or in a deep bowl, sift the flour, baking powder, baking soda, and salt

  4. In the mixer bowl, place the eggs, cheese, butter, sugar, and lemon zest, then attach the whisk attachment and mix on medium speed for one minute

  5. Add the flour mixture and mix for one minute, then pour the cake batter into the pan

  6. For the topping, in a deep bowl place the coconut, almonds, sugar, and butter, mix with fingertips until crumbly, and spread over the cake batter in the pan

  7. Place the pan in the oven for 30 minutes or until the cake is done, test doneness with a small wooden stick that should come out clean

  8. Remove the cake pan from the oven and place it on a wire rack to cool completely

  9. Using a wide metal knife, cut the cake into squares or as desired
