Almond and Coconut Cake
Ingredients
- 1 cup flour
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 3 large eggs
- 1/4 cup cream cheese
- 1/2 cup butter
- 1/2 cup fine sugar
- 1 tablespoon lemon zest
Top layer
- 3/4 cup fine coconut
- 3/4 cup ground almonds
- 1/2 cup brown sugar
- 1/4 cup chilled butter
Preparation
Set the rack in the middle of the oven and preheat the oven to 180°C. Prepare a 9-inch pan by greasing it with shortening and flouring it.
On a piece of parchment paper or in a deep plate, sift together the flour, baking powder, baking soda, and salt.
In the mixer bowl, place the eggs, cream cheese, butter, sugar, and lemon zest. Attach the whisk and run on medium speed for one minute.
Add the flour mixture and mix for one minute. Pour the cake batter into the prepared pan.
For the top layer, in a deep plate, combine coconut, ground almonds, brown sugar, and chilled butter. Mix with fingertips until crumbly and spread over the cake batter in the pan.
Place the pan in the oven and bake for 30 minutes or until done. Test doneness with a wooden toothpick; it should come out clean when inserted into the center.
Remove the pan from the oven and place it on a wire rack to cool completely.
Using a wide metal knife, cut the cake into squares or as desired.
