Simple Vanilla Milk Cake

Ingredients

  • 2 1/4 cups flour
  • 1 cup fine-grained sugar
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup vegetable shortening or soft butter
  • 1 cup low-fat milk
  • 1 teaspoon vanilla extract
  • 2 medium eggs

Preparation

  1. Adjust the rack to the middle of the oven. Preheat the oven to 180°C. Prepare 2 round cake pans of 8 inches. Grease the pans with shortening and flour.

  2. In the mixer bowl, place flour, sugar, baking powder, salt, shortening, milk, vanilla, and eggs. Attach the beater. Turn on medium speed for 2 minutes to form a smooth cake batter.

  3. Spread the cake batter evenly in the pans.

  4. Bake for 35 minutes. Test doneness with a wooden toothpick. It should come out clean when inserted in the center.

  5. Remove from oven and let cool for 3-4 minutes. Invert onto a wire rack or cardboard base and let cool completely.

  6. Place one cake layer on a serving plate. Add a little cream. Place the second layer. Spread cream on sides and top of cake.

  7. Refrigerate until serving to enhance flavor.
