Simple Moist Walnut Cake with Apricot Glaze

Ingredients

  • 200 g softened butter
  • 180 g sugar
  • a pinch of salt
  • 4 large eggs
  • 150 g all-purpose flour
  • 1 tsp baking powder
  • 150 g ground walnuts
  • 3 tbsp milk
  • butter for greasing the pan

Decoration

  • 3-4 tbsp heated apricot jam (optional)
  • walnuts (optional)

Preparation

  1. Grease a 26 cm springform pan

  2. Preheat the oven to 180°C conventional (160°C fan)

  3. Beat softened butter with sugar and salt until fluffy

  4. Add the eggs one at a time

  5. Mix flour, baking powder, and ground walnuts

  6. Alternately add the flour mixture and milk to the batter

  7. Pour the batter into the prepared pan and smooth the top

  8. Optionally sprinkle with additional walnuts

  9. Bake for about 30 minutes

  10. Let the cake cool on a wire rack

  11. Once cooled, optionally brush with 3-4 tablespoons of heated apricot jam

  12. Optionally sprinkle with walnuts
