Chocolate Pudding Sheet Cake with Chocolate Glaze

Ingredients

Dough

  • 320 g all-purpose flour (Type 405)
  • 3 tsp baking powder
  • 230 g sugar
  • 1 pinch salt
  • 250 g softened butter
  • 5 large eggs
  • 50 ml milk

Pudding cream

  • 3 packets (37g each) vanilla pudding powder
  • 100 g sugar
  • 1350 ml milk

Chocolate glaze

  • 200 g dark chocolate
  • 100 g milk chocolate
  • 200 g heavy cream

Additional

  • Butter or cooking spray for the pan
  • 250 g butter cookies

Preparation

  1. Preheat oven to 180°C conventional (160°C convection). Grease a 38x45 cm baking sheet and place a same-size baking frame on it for clean edges

  2. Mix flour, baking powder, sugar, and salt in a bowl. Add softened butter, eggs, and milk and beat for 1 minute until smooth. Spread batter on baking sheet and bake 35 minutes. Let cool completely

  3. Mix pudding powder, sugar, and 100 ml milk in a bowl until smooth. Bring remaining 1250 ml milk to boil. Stir pudding mixture into boiling milk and simmer 1 minute while stirring constantly. Cover with plastic wrap and let cool slightly

  4. Once base is cooled, stir warm pudding and spread evenly over base. Place butter cookies tightly on pudding layer. Let cake stand 30 minutes

  5. Heat heavy cream until hot and pour over chopped dark and milk chocolates. Let sit 5 minutes then stir until smooth. Pour glaze over cookie layer
