Wonderful Turkish Bread

Ingredients

Dough

  • 4 1/2 cups flour
  • 4 teaspoons instant yeast
  • 3 tablespoons sugar
  • 1 tablespoon salt
  • 1/2 cup milk
  • 1 cup water
  • 1/4 cup butter or ghee or olive oil or corn oil

Topping

  • 1 large egg
  • 3 tablespoons toasted sesame seeds
  • 1 tablespoon whole fennel seeds

Preparation

  1. In the mixer bowl, place 4 cups of flour, yeast, sugar, and salt, mix to combine, and set aside.

  2. In a small pot, place milk, water, and butter, heat until butter melts and mixture is warm, then add to the flour mixture.

  3. Attach the dough hook and mix until dough forms, add more flour if too soft, and knead on low speed for 4-5 minutes until smooth.

  4. Place the dough in an oiled bowl, cover, and let rise in a warm place for about an hour or until doubled in size.

  5. Press the dough to release air and let it rest for a few minutes.

  6. Shape the dough into a large disk and place it on a large tray.

  7. Cover the disk with a cotton towel and let it rise until doubled in size.

  8. Preheat the oven to 190°C and set the middle rack.

  9. Place the egg in a small bowl, beat with a fork, and brush it over the bread surface.

  10. Sprinkle sesame seeds and fennel seeds on the bread, make decorative cuts with a knife, and let it rest uncovered for about 5 minutes.

  11. Bake in the oven for 25-30 minutes until done.
