Ramazan Pidesi Turkish Bread

Ingredients

  • 500g all-purpose flour
  • 330 ml water
  • 15 g salt
  • 20 g sugar
  • 20 g extra virgin olive oil
  • 10 g fresh yeast
  • 2 egg yolks
  • Sesame seeds
  • Poppy seeds

Preparation

  1. Mix flour, water, yeast, sugar, and salt. Knead well, and only at the end add the oil. When the dough is well-developed, do some reinforcing folds and let it rest until it has doubled in volume for 2-3 hours.

  2. Then divide it into two and shape into loaves.

  3. After a final rise for 2 hours, roll it out slightly, brush with egg yolk, make indentations with fingers, and decorate with seeds.

  4. Bake at 220 degrees with a small pot of water on the bottom for the first 10 minutes and then for another 5-10 minutes without.
