Ramazan Pidesi Turkish Bread
Ingredients
- 500g all-purpose flour
- 330 ml water
- 15 g salt
- 20 g sugar
- 20 g extra virgin olive oil
- 10 g fresh yeast
- 2 egg yolks
- Sesame seeds
- Poppy seeds
Preparation
Mix flour, water, yeast, sugar, and salt. Knead well, and only at the end add the oil. When the dough is well-developed, do some reinforcing folds and let it rest until it has doubled in volume for 2-3 hours.
Then divide it into two and shape into loaves.
After a final rise for 2 hours, roll it out slightly, brush with egg yolk, make indentations with fingers, and decorate with seeds.
Bake at 220 degrees with a small pot of water on the bottom for the first 10 minutes and then for another 5-10 minutes without.
