Basic Baked Savory Pastry Dough

Ingredients

  • 500 ml warm milk
  • about 1.5 kg all-purpose flour
  • 300 ml vegetable oil
  • 3 eggs, separated
  • 5 tablespoons sugar
  • 1 scant tablespoon salt
  • 100 g fresh yeast

Preparation

  1. Place warm milk in a bowl and dissolve the yeast

  2. Add egg whites, sugar, salt, and oil

  3. Cover well and wait until a foam forms similar to laundry detergent foam

  4. Mix with a wooden spoon, then gradually add flour until the dough is kneadable. Avoid adding too much flour to prevent dryness; if the dough becomes too dry, add a bit more oil

  5. Knead the dough, then let it rest covered with plastic wrap and a kitchen towel for 30 minutes

  6. Divide the dough into pieces and form about thirty small balls

  7. Roll each ball into a round shape

  8. Add your preferred filling

  9. Brush the pastries with reserved egg yolks

  10. Bake until lightly golden, avoiding over-browning
