Homemade Bread with Yogurt Whey

Ingredients

  • 500 grams all-purpose flour
  • 150 grams yogurt whey
  • 110-120 grams water (add half first, adjust gradually)
  • 8 grams yeast
  • 8 grams salt
  • 5 grams sugar
  • 1 egg
  • 35 grams vegetable oil or olive oil
  • Sesame and nigella seeds to taste
  • Full-fat milk for glazing

Preparation

  1. Sift the flour and mix half the water with yeast, sugar, egg, and oil

  2. Add yogurt whey and salt, then mix and knead the dough

  3. Gradually add the remaining water while kneading until the dough is soft and smooth

  4. Incorporate sesame and nigella seeds, then place the dough in an oiled container to rest until doubled in size

  5. Divide the dough into four parts, shape each piece, use an oiled spoon to add a design, and let rest for 30 minutes

  6. Brush with full-fat milk and bake in an electric oven at 180°C for 30 minutes until golden brown

Notes

  1. Use whey from strained local yogurt for probiotic benefits and enhanced flavor

  2. Adjust water based on flour absorption for optimal dough consistency
