Turkish Açma Bread Rolls

Ingredients

  • 1 cup lukewarm water
  • 1 cup lukewarm milk
  • Less than 1 cup vegetable oil
  • 1 egg white (yolk reserved for topping)
  • 1 package fresh yeast
  • 3 tablespoons sugar
  • 1 teaspoon salt
  • Almost 1 kg flour

For the dough pieces

  • 1 teaspoon butter per piece

For the topping

  • Reserved egg yolk
  • 1 heaping teaspoon yogurt
  • Sesame seeds

Preparation

  1. In a deep bowl, combine all ingredients except flour and mix well.

  2. Carefully add flour to form a soft dough and let it rise.

  3. Divide the risen dough into 16 equal pieces and place 1 teaspoon butter on each.

  4. For each piece, work the butter into the dough on the counter, flatten to the size of a dinner plate with your hands, and roll it up.

  5. Twist and stretch the rolled dough with both hands and tie it into a knot.

  6. After shaping all pieces, let them rest on a baking tray for 10-15 minutes for a second rise.

  7. Mix the reserved egg yolk with yogurt and brush it on the shaped dough, then sprinkle with sesame seeds.

  8. Bake in a preheated 180°C oven until golden brown.
