Turkish Açma Bread Rolls
Ingredients
- 1 cup lukewarm water
- 1 cup lukewarm milk
- Less than 1 cup vegetable oil
- 1 egg white (yolk reserved for topping)
- 1 package fresh yeast
- 3 tablespoons sugar
- 1 teaspoon salt
- Almost 1 kg flour
For the dough pieces
- 1 teaspoon butter per piece
For the topping
- Reserved egg yolk
- 1 heaping teaspoon yogurt
- Sesame seeds
Preparation
In a deep bowl, combine all ingredients except flour and mix well.
Carefully add flour to form a soft dough and let it rise.
Divide the risen dough into 16 equal pieces and place 1 teaspoon butter on each.
For each piece, work the butter into the dough on the counter, flatten to the size of a dinner plate with your hands, and roll it up.
Twist and stretch the rolled dough with both hands and tie it into a knot.
After shaping all pieces, let them rest on a baking tray for 10-15 minutes for a second rise.
Mix the reserved egg yolk with yogurt and brush it on the shaped dough, then sprinkle with sesame seeds.
Bake in a preheated 180°C oven until golden brown.
