Authentic Za'atar Manakish Flatbread

Ingredients

  • 4.5 cups all-purpose flour
  • 1 tablespoon instant yeast
  • 2 teaspoons salt
  • 1 teaspoon sugar
  • 1/4 cup olive oil
  • 1 cup yogurt
  • 1 teaspoon dried green thyme
  • 3/4 cup warm water

Topping

  • 1/2 cup olive oil
  • 1/4 cup za'atar
  • 1 tablespoon sumac

Preparation

  1. In a mixer bowl, place 4 cups of flour, yeast, salt, and sugar. Attach the dough hook and mix on low speed for a few seconds to combine.

  2. Add the olive oil, yogurt, and dried thyme. Knead on medium speed for 2 minutes, then add the warm water and knead until a smooth and soft dough forms. Add the remaining flour if the dough is too sticky.

  3. Place the dough in an oiled bowl, cover with plastic wrap, and let it rise in a warm place until doubled in size.

  4. Grease a shallow baking tray generously with oil. Place the dough in the tray and spread it with your fingers to cover the bottom.

  5. Cover the dough with plastic wrap and let it rise again in a warm place until doubled. Then, press the dough with your fingertips and distribute the olive oil, za'atar, and sumac over it.

  6. Position the oven rack in the middle and preheat the oven to 180°C.

  7. Bake for 20 minutes.
