Zucchini Pie with Cheddar and Herbs

Ingredients

  • 1 medium green bell pepper, chopped
  • 1 pinch black pepper
  • 1 teaspoon salt
  • 2 teaspoons baking powder
  • 1 teaspoon mixed spices
  • 1 teaspoon oregano
  • 2 tablespoons flour
  • 3 large eggs
  • 6 medium zucchinis
  • 1 cup milk
  • 1/2 teaspoon saffron
  • 1 medium red bell pepper, chopped
  • 1.5 cups shredded cheddar cheese

Preparation

  1. Set the oven rack in the middle and preheat the oven to 180°C.

  2. Prepare a medium-sized oven dish suitable for serving.

  3. In a deep bowl, put saffron and milk and set aside.

  4. Cut off the ends of the zucchinis using a knife.

  5. In a food processor with the slicing blade, slice the zucchinis into thin slices.

  6. In a deep bowl, place eggs, flour, oregano, mixed spices, baking powder, salt, and pepper; whisk with a hand whisk until well mixed. Add the saffron-milk mixture and whisk until combined. Add half of the shredded cheddar cheese.

  7. Layer in the dish: spread a layer of zucchini slices, add some chopped red and green peppers, pour some egg mixture, and sprinkle some cheese. Repeat the layers, ending with a cheese layer.

  8. Cover the dish with aluminum foil.

  9. Bake in the oven for 25 minutes until the vegetables are cooked and the top is browned. Serve warm.
