Simple Rustic Brazilian Cornmeal Cake
Ingredients
- 2 cups cornmeal
- 1.5 cups sugar
- 1 cup all-purpose flour
- 3 eggs
- 1 cup orange juice
- 3/4 cup oil
- 1 tablespoon baking powder
Syrup
- 1 cup sugar
- 1/2 cup orange juice
Preparation
Blend sugar, eggs, orange juice, and oil in a blender.
Add cornmeal and flour, then blend again.
Add baking powder and blend once more.
Pour the batter into a greased pan and bake in a preheated oven for about 40 minutes.
While the cake is baking, prepare the syrup by heating sugar and orange juice over low heat until sugar dissolves and thickens slightly.
After baking, pour the syrup over the cake and serve.
Tips
It's great served with coffee.
