Brazilian Sweet Cornmeal Cake with Optional Cheese

Ingredients

  • 3 eggs
  • 1/2 cup oil
  • 1 cup sugar
  • 1 cup milk
  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder

Preparation

  1. Preheat oven to 350Β°F (175Β°C). Grease and flour a 9-inch round cake pan

  2. In a large bowl, beat the eggs, oil, and sugar using a whisk or wooden spoon until well combined

  3. Add the milk and beat until smooth

  4. Add the cornmeal, flour, and baking powder, and beat until well combined

  5. If desired, mix in slices of mozzarella cheese or spoonfuls of cream cheese

  6. Pour the batter into the prepared pan

  7. Bake for 40 minutes or until a toothpick inserted into the center comes out clean and the top is golden brown
