Rustic Brazilian Cornmeal Cake with Orange Glaze

Ingredients

Cake batter

  • 2 cups cornmeal
  • 1 1/2 cups sugar
  • 1 cup all-purpose flour
  • 3 eggs
  • 1 cup orange juice
  • 3/4 cup vegetable oil
  • 1 tablespoon baking powder

Orange glaze

  • 1 cup sugar
  • 1/2 cup orange juice

Preparation

  1. Blend sugar, eggs, orange juice, and vegetable oil in a blender until smooth

  2. Add cornmeal and all-purpose flour and blend until combined

  3. Add baking powder and pulse to incorporate

  4. Pour the batter into a greased baking pan

  5. Bake in a preheated oven at 350Β°F (180Β°C) for about 40 minutes, or until a toothpick inserted comes out clean

  6. While the cake bakes, prepare the glaze by heating sugar and orange juice in a small saucepan over low heat, stirring occasionally, until the sugar dissolves and the mixture thickens slightly

  7. Pour the warm glaze over the baked cake

  8. Serve warm with coffee
