Rustic Brazilian Cornmeal Cake with Orange Glaze
Ingredients
Cake batter
- 2 cups cornmeal
- 1 1/2 cups sugar
- 1 cup all-purpose flour
- 3 eggs
- 1 cup orange juice
- 3/4 cup vegetable oil
- 1 tablespoon baking powder
Orange glaze
- 1 cup sugar
- 1/2 cup orange juice
Preparation
Blend sugar, eggs, orange juice, and vegetable oil in a blender until smooth
Add cornmeal and all-purpose flour and blend until combined
Add baking powder and pulse to incorporate
Pour the batter into a greased baking pan
Bake in a preheated oven at 350Β°F (180Β°C) for about 40 minutes, or until a toothpick inserted comes out clean
While the cake bakes, prepare the glaze by heating sugar and orange juice in a small saucepan over low heat, stirring occasionally, until the sugar dissolves and the mixture thickens slightly
Pour the warm glaze over the baked cake
Serve warm with coffee
