Creamy Brazilian Cornmeal Cake
Ingredients
- 2 cups sugar
- 3 eggs
- 3 tablespoons margarine
- 4 cups whole milk
- 2 tablespoons grated Parmesan cheese
- 1 cup grated coconut
- 1 cup cornmeal
- 3 tablespoons wheat flour
- 2 teaspoons baking powder
Preparation
Place milk, eggs, margarine, sugar, and cheese in a blender and blend for 5 minutes
Add cornmeal, wheat flour, grated coconut and blend until incorporated
Finally, mix in the baking powder with a spatula
Pour the mixture into a greased pan (30x20cm) and bake in a preheated oven at 180Β°C for about 40 minutes or until golden
Notes
Can be served warm
