Creamy Brazilian Cornmeal Cake

Ingredients

  • 2 cups sugar
  • 3 eggs
  • 3 tablespoons margarine
  • 4 cups whole milk
  • 2 tablespoons grated Parmesan cheese
  • 1 cup grated coconut
  • 1 cup cornmeal
  • 3 tablespoons wheat flour
  • 2 teaspoons baking powder

Preparation

  1. Place milk, eggs, margarine, sugar, and cheese in a blender and blend for 5 minutes

  2. Add cornmeal, wheat flour, grated coconut and blend until incorporated

  3. Finally, mix in the baking powder with a spatula

  4. Pour the mixture into a greased pan (30x20cm) and bake in a preheated oven at 180Β°C for about 40 minutes or until golden

  1. Can be served warm
