Blender Coconut Cake with Parmesan

Ingredients

  • 3 eggs
  • 2 1/4 cups milk
  • 1 1/2 cups sugar
  • 1/2 cup shredded coconut
  • 1/2 cup grated parmesan cheese
  • 1 cup all-purpose flour
  • 1/4 cup unsalted butter, at room temperature
  • 1 tablespoon baking powder

Preparation

  1. Place all ingredients in the blender

  2. Blend for 3 minutes

  3. While the batter is blending, grease a baking pan with margarine and flour

  4. Pour the batter into the pan and bake in a preheated oven at 180Β°C for about 50 minutes or until golden

Tips

  1. Use an 18.5 by 28 cm baking pan for best results
